At the heart of Plateau Valensole, Riez is built on the hillside overlooking Saint Maxime the confluence of three valleys. These have been used by communication channels in the High Roman Empire. At this junction of roads from Aix and Frejus, the Emperor Augustus founded the colony of Roman law: Colonia Julia Augusta Reiorum Appolinaris. Four monolithic granite columns surmounted by a carved architrave, are the remains of a temple in the 1st century AD. On the ruins of Roman baths, a baptistery and cathedral are high during the fifth century. The Baptistery remains one of the few early Christian buildings in Provence. Its function is then bishop of Riez an important city. The fourteenth century, the city is surrounded by walls built with local materials: pebbles and river sand, walls that can still be seen including the two doors that provide access to the old center (Sanson and Ayguière doors) and Corner Tower (Clock Tower). Inside the old city, the High Street is steeped in a medieval atmosphere with narrow streets that communicate with each other by "androne" (covered passageways under the houses), ancient mansions and Renaissance including the Hotel de Mazan. With the disappearance of the bishopric to the French Revolution, Laugh loses its importance. Today, craftsmen, potters, potters, traders market perpetuate the tradition of this city rich in history. Local produce: truffles, honey, olive oil, game, species of lavender are honored and are subject to numerous festivities.
